Mini Egg Nest Cupcakes

I've mentioned before that I have a real weakness for mini eggs (although I'm not fussy; that weakness goes for almost any form of Easter-related chocolate come to think of it). I had a few spare mini eggs lying around the kitchen so decided to bake a few little mini eggs nests for my family. I'm not the biggest cake fan around but I love eating the cake mix (no regrets here) and if I am going to eat cake, it's going to be a cupcake and more often than not, one that I enjoyed baking. The cakes are super easy to bake and the butter cream nests were purely butter and icing sugar, mixed together with a splash of trial and error and a lot of taste testing along the way.

So as I greedily inhale about four of these little cupcake nests, I can safely say I'll be baking these again. A lot. In the lead up to Easter. And probably beyond.
